Double boiler
A system of pots or containers used for heating products (usually liquid or pasty)
which cannot be heated directly or at a high temperature. Double boilers are usually
used to heat gradually, to maintain a constant temperature, and sometimes for
reasons of safety (inflamable products). If solid, the product that needs to be
heated can be placed directly into a liquid that is being heated (usually water).
Otherwise the solid or liquid product can be placed into a hollow container that is
in turn plunged into some liquid which is being heated directly.
